Flavour Profile/Aroma
You’ll get lovely notes of woodlands fruit with this red burgundy, as well as cherry, strawberry and raspberry. The aroma comes courtesy of tobacco and sweet spices, and the tannins give it a real warm finish.
Recommended food pairings
A strong red burgundy like this makes a great wine with cheese after a meal. For tasting menus, we pair ours with a Bleu D'Auvergne: a classic, strong French blue-veined cheese that can stand up to the strength of this Pinot Noir.
Growing Conditions
Grape harvest is done manually at Domaine Coche-Bizouard where this wine is produced. Typically, this harvest happens later than for other winegrowers in the region, sometimes up to a week behind. The reds are not destalked before fermenting.
Winemaking notes
All wines at Domaine Coche-Bizouard are fermented slowly for a long time. The wines are then put into a barrique. As a rule, 25 percent of the barrel is new wine, which is aged for 18 to 20 months.
About the Winemaker
Domaine Coche-Bizouard owner Jean-François has a great reputation for his excellent wines and great winemaking methods, which he’s passed down through the family-run vineyard. Spread over nine hectares, the domaine is situated around the village of Meursault. It has around 40 different parcels of vines, split roughly 50/50 between red and white. The vines have an average age of 30 to 40 years.
