Ossau Iraty Cheese
A cheese with a whole lot of history. Ossau-Iraty is thought to be one of the oldest cheeses in the world. The story goes that the Greek God Apollo had a son who was a shepherd and made this cheese from his sheep's milks. Ossau-Iraty is still followed by a traditional recipe that can be traced back 3000 years, this means that this cheese predates the English Alphabet! Torta de Barros Cheese
There is a tradition in Spain of making ewes' milk cheeses using cardoon thistle rennet. This leads to the cheese age from the inside out, making the middle really unctuous and oozy and resulting in a full flavour. We love this cheese - it's entirely delicious!
Wigmore Cheese
A sophisticated, soft cheese full of vibrate flavours and great texture. Expect a complex, floral and sweet palette that will leave you wanting a little more each time. Indulgent, yet delicate Wigmore comes from Village Maid and is made using traditional methods for hand-washed, curd cheese. It's a gentle cheese but powerful in its own right and we can't get enough of it!

Like all classic Italian young cheeses, it is smooth, yoghurty and sweet! Fun fact: Pecore in Italian means sheep; hence their sheep’s milk cheeses are often called ‘pecorino’!
About Ewe's Milk Cheese
What is Ewes milk cheese?
Ewes milk cheese is a type of cheese made from the milk of a ewe. It can come in a variety of forms including fresh and aged, soft and hard, and flavored with herbs or spices. Examples include Spanish manchego, Italian pecorino, and French Roquefort — a classic blue cheese.
Is ewes milk cheese suitable for people who are lactose intolerant?
Some people who are lactose intolerant can tolerate small amounts of ewes milk cheese, generally lower in lactose than cow's milk cheese. However, it depends on the individual's level of lactose intolerance. Some aged ewes milk cheeses, like pecorino, have less lactose and may be easier to digest.
How is ewes milk cheese made?
Ewes milk cheese is made by coagulating the milk, usually with the use of rennet or microbial starter cultures, then separating the curds from the whey and shaping the curds into the desired form. The cheese is then aged for a period of time, from days to several years, depending on the type of cheese.
How should I store ewes milk cheese?
Ewes milk cheese should be stored in the refrigerator, wrapped tightly in wax paper or aluminum foil to prevent it from drying out. It can also be stored in a plastic container with a tight-fitting lid.
How long does Ewes milk cheese last?
The shelf life of ewes milk cheese varies depending on the type of cheese and how it has been stored. Properly stored, fresh ewes milk cheese can last for several weeks, while aged cheese can last for several months to a year or more.
