Fior del Pastore is a sweet cheese, yet the milk and flower flavours you pick up stop it being overpowering, making it perfect for after-dinner.
We love a dry, crisp white with this cheese, such as the Bric Sassi Gavi di Gavi. It’s citrus and floral, so balances the saltiness of this slightly sharp Percorino well.
About the producer
This Pecorino is made at award-winning Caseificio Il Fiorino in Roccabegna, Tuscany. The family dairy produce cheeses exclusively from milk from the sheep of the hills of Maremma, in a tried and tested tradition dating back to 1957.
How to enjoy
Follow some Italian traditions and serve Pecorino after a meal, or grate over pasta in place of Parmigiano-Reggiano. Alternatively, it’s perfect on a warm slice of bread paired with something salty, like anchovies, and balanced by a fresh white wine.
