There is a tradition in Spain of making ewes’ milk cheeses using cardoon thistle rennet. This leads to the cheese age from the inside out, making the middle really unctuous and oozy and resulting in a full flavour.

We love this cheese – it’s entirely delicious!




Ewe's Milk

Flavour Profile: The flavour for this is mild and very personal, with a touch of acidity and fine herbs and a bitter aftertaste produced by its rennet. It has a creamy texture, ivory white with bright eyes unequally distributed. Its rind has a yellow-ocher colour, and it is thin and brittle.

Drink Pairing: This cheese is great with a full-flavoured, vibrant rose! Something off-dry such as the Mesta or maybe even the Rondo!

About the Maker: This cheese is from Brindisa. Brindisa comes from the word ‘brindis’, which means to raise one’s glass in a toast, and the past 30 years, Brindisa has been to toast and celebrate the varied cultures, landscapes and, above all the exceptional foods of Spain.

How to Enjoy: Enjoy this cheese at room temperature and really see just how creamy it can be! It’s great baked with a sprinkle of smoked paprika.
