We think you need a cheese with a pungent or salty flavour to pair with this rich gin. A blue veined cheese, like the salty Perl Las, works well; or try a washed-rind cheese like Affineur Walo Red Wine Farmer to match up to the powerful gin taste.
How to serve
As a sloe gin, Sloe Ruby is a classic neat and a favourite winter warmer. For a more summery G&T, mix it with a good quality tonic (traditional Indian tonic or lemon-flavour tonic suit the gin perfectly). If you fancy a fizz cocktail, pour a shot of gin into a glass of prosecco.
