A creamy, salty blue cheese with a lovely granular texture. While this is a blue, it’s not too acidic despite the strong flavour. It comes from the Asturias region of Northern Spain and named after a local village.
Flavour Profile: This is both a sweet and slightly spicy blue cheese. The aroma is both buttery and rich, with rich caramel flavours. The cheese has a delicate natural rind with soft paste with light blue veins.
Drink Pairing: Try with a Tempranillo, Cabernet Sauvignon or Spanish dessert wine depending on preference.
About the Maker: This cheese is from Brindisa. Brindisa comes from the word ‘brindis’, which means to raise one’s glass in a toast, and the past 30 years, Brindisa has been to toast and celebrate the varied cultures, landscapes and, above all the exceptional foods of Spain.
