Ossau Iraty Cheese

A cheese with a whole lot of history. Ossau-Iraty is thought to be one of the oldest cheeses in the world. The story goes that the Greek God Apollo had a son who was a shepherd and made this cheese from his sheep's milks. Ossau-Iraty is still followed by a traditional recipe that can be traced back 3000 years, this means that this cheese predates the English Alphabet!  You’ll be getting a creamy, earthy and beautifully smooth cheese.

Parmigiano Reggiano Cheese

Parmigiano Reggiano Cheese

Parmigiano Reggiano is Italy’s most famous cheese, if not the World’s most famous. All wheels are inspected at 12 months. The cheeses of the highest quality are then selected to further mature to 30 months. This process ensures we get the best possible product, with the distinctive saltiness being the hallmark of Parmigiano. This cheese has been aged for 30 months, meaning it is rich in flavour, incredibly crumbly and grainy in texture and just done to perfection.

Pecorino Romano PDO Cheese

Pecorino Romano PDO Cheese

This is one big flavoured cheese with loads to get excited about. Due to its long ageing process you can expect a whole different taste from most variations of pecorino. Its maturation process allows for a more caramel and rich palette not dissimilar to a parmesan. It is a sheep's cheese with a nutty, full-bodied flavour with playful touches of sweetness and grass.

Rachel

Rachel

Rachel is an unusual, semi-hard goats cheese with a firm texture. The lightly washed rind gives it a sweet, nutty and lingering flavour. During its maturing stages, the cheese  is regularly washed in braine which leads to its pinky rind. Rachel is the perfect cheese for those who enjoy a lighter cheese that is not too “goaty” in flavour. It was named after a friend of the cheesemaker who says - like the cheese she is sweet, curvy, and slightly nutty!

Selle-sur-Cher Cheese

Selle-sur-Cher Cheese

THIS WILL BE BACK IN STOCK ON THE WEEK COMMENCING THE 25TH OCTOBER - THANKS FOR YOUR PATIENCE. A soft cheese with a natural rind, Selle Sur Cher is fine and silky. It stands out for its peculiar shape, thanks to filling pyramid-shape moulds with a ladle during manufacture. You’ll also recognise its grey-blue moulds that form on its round disc coating as it matures, thanks to a dusting of charcoal ash. It’s a whole goat’s milk cheese, so it’s strong in flavour with a salty rind.

Smoked Westcombe Cheese

Smoked Westcombe Cheese

Who doesn’t love smoked cheese?  With a deep, complex, mellow base flavour, this smoked Cheddar has a richly aromatic and deeply smokey flavour. An interplay of tangy and woody flavours in a creamy paste. Enjoy on it’s own or use it to cook with to infuse some brilliant campfire richness.

Yoredale Cheese

Being Yorkshire and all, we love a good Wensleydale cheese!  Made using raw milk to a slow traditional recipe, resulting in a cheese that is smooth and creamy in texture. Yoredale is an incredible Dale cheese with loads to love.
