Grillo is well-structured and well-balanced, with fruity hints of green apple and ripe melon, and mineral flavours. You’ll also pick up a subtle floral aroma and notes of jasmine that give the wine its softness and freshness.

100% Grillo grape is used for this wine. Grillo is the most famous of Sicily’s original white grape varieties, thanks to its floral aromas. It’s grown at different elevations, from sea level to its regions highest hills, each growing area giving the final wine its own individual character.
The Grillo grapes are harvested by hand and vinified in stainless steel tanks to keep the fruits fresh and pure. The wine is aged on the lees for a couple of months, before the grapes are destemmed and softly pressed to preserve the aromas and the acidity of the must.
Next, the juice is pressed off in a cool environment before it ferments for 15 days under temperature-controlled conditions. The wine is then rested in a tank for around four months. It is only filtered just prior to bottling to make sure it keeps its elegant aromas.
