Pecorino Dolce is a fresh, light cheese made from sheep’s milk. It never goes runny like a Brie but instead it maintains its structure in spite of being intensely creamy.
Drink Pairing: Something light and crisp to really hit the spot. We recommend our Kore, Grillo – a lovely, well balanced, delicate Italian white wine.
About the Maker: “Pecorino cheese is one of the oldest cheeses we know. Several ancient Roman scholars including Plinny the Elder and Virgil made references to cheese production techniques which were very similar to how we make Pecorino today. They say that an army marches on its stomach and the Roman legionnaires famously took Pecorino cheese with them on their travels as it had a high nutritional value and a long shelf life.”

What is Pecorino? Pecorino is a family of Italian hard cheeses made exclusively from sheep’s milk. The name comes from ‘pecora’, the Italian word for sheep. Unlike Parmesan (Parmigiano-Reggiano), which uses cow’s milk, pecorino has a sharper, more tangy flavour profile with a slightly grassy undertone from the sheep’s milk.
