Goat’s milk cheese is full flavoured and punchy with a distinctive savoury flavour. The French are famous for their soft mould ripened Goat’s but don’t rule out the English. Yorkshires own Ribblesdale Cheese produce distinctly different styles of Goats Cheese.
From a sweet and grassy aroma, to a crumbly texture, this cheese will definitely have you coming back for second helpings.
Ribblesdale Mature is nutty, fruity and has a slightly caramelised milk flavour, while closer to the rind it becomes more ‘goaty’ and rounded – but always balanced.
A soft cheese with a natural rind, Selle Sur Cher is fine and silky.
It stands out for its peculiar shape, thanks to filling pyramid-shape moulds with a ladle during manufacture. You’ll also recognise its grey-blue moulds that form on its round disc coating as it matures, thanks to a dusting of charcoal ash.
It’s a whole goat’s milk cheese, so it’s strong in flavour with a salty rind.
