Flavour Profile: Perl Las has local sea salt rubbed on the rind which gives a subtler saltiness than you may find with blue cheese in general. This is a good introductory cheese for those who aren’t keen on blue cheese as the flavours are gentle and refined, yet satisfying with a subtle sweetness.

Drinks Pairing: We love this one with a stout. However, it naturally pairs wonderfully with Port too. 

About the Maker: “The family began producing Cheese here at the farm in 1986 and now our artisan cheeses are among the most respected in the UK. Caws Cenarth is the oldest established producer of Welsh Farmhouse Caerffili. As well as the traditional Caerffili, Caws Cenarth also produces other varieties of this Welsh Cheese, Garlic and Herb Caerffili and Smoked Caerffili. More recently, Carwyn has developed new cheeses, including the Brie-like Perl Wen, a creamy blue, Perl Las, and Golden Cenarth, a washed-rind cheese with a powerful flavour – and winner of the Supreme Champion accolade at the British Cheese Awards 2010”

How to Enjoy: Perl Las is at its best with a bit of crusty bread and possibly a bit of fig jam to compliment the light sweetness of the cheese. You can also use it to create a blue cheese sauce – the perfect accompaniment to steak or pasta dishes.
