Stärnächäs, from Swiss affineur Walo von Mühlenen and cheesemaker Marcel Gabriel, is produced at the foot of the Säntis mountain near Appenzell, Switzerland. The famous Swiss affineur’s production and ripening methods have won multiple awards and critical acclaim.
