Flavour Profile: Creamy, crumbly & full of flavour, this cheese is made to a recipe predating WW2! Wensleydale Top Tier is cloth bound and matured for longer, which gives it a more rounded flavour and creamier texture than younger Wensleydale.
Drink Pairing: A lovely crisp white wine. We love this with our New Hall Vineyard Left Field Blend, it is quite simply, a match made in heaven.
About the Maker: The Wensleydale Creamery is the home of the famous, crumbly and delicious Yorkshire Wensleydale cheese! It is based in the heart of the Yorkshire Dale National Park in Hawes, Wensleydale. The cheesemaking in this area can be dated back as far as 1150 and the creamery was built in 1897! That’s a lot of cheese!
How to Enjoy: On a cracker with some chutney. We love Wensleydale cheese for exactly what it is and it is best enjoyed as such.
