How to build the perfect Christmas cheese board

A good board is about contrast. Start with four or five cheeses that each do something different: a hard cheese such as a mature cheddar, a soft cheese like brie or camembert, a tangy blue cheese, a regional favourite, and something a little unusual to talk about. Allow roughly 120g of cheese per person if it is part of a wider spread, or closer to 200g if the board is the main event. Fill the gaps with crackers, a good chutney, fresh and dried fruit, nuts and a few cured meats, then bring everything up to room temperature before serving.
