Ewe's Milk

Flavour Profile: A gentle mild blue aged for 30 days with savoury notes. It comes with a slight bitterness, but also with some lovely sweetness that lingers in your mouth. The ewe’s milk, locally sourced each day, gives this cheese a lovely rounded richness. 

Drink Pairing: This deserves a big flavoured wine. We love it with a Tawny Port or even Otra Tierra Merlot.

About the Maker: “Brought in up Sardinia, Mario Olianas comes from a strong family of Italian gastronomes. Moving to Leeds in 2001, he quickly set about realising his passion for food – by setting up Italian supper clubs and baking fine foods. Upon hearing about his family’s diversification into cheese-making, however, Mario decided he wanted to create a better Italian cheese than his brothers’.  Getting hold of a small vat, he started making cheese in a specially converted room within his house, following an adapted Pecorino recipe. He uses fresh sheep’s milk which he collects daily from just outside Harrogate, and cultures imported from Italy.”

Not for the faint hearted!

I love blue cheese in general. Shropshire probably my favourite rather than the more obvious Stilton. Leeds Blue is definitely the strongest I have tasted. I suggest this is not an everyday blue but one to put on the cheeseboard at a special occasion. I would welcome your thoughts on a drink that could stand up to it
