Best wines and ports to be having this season…

We know we have quite the selection, and that can make it hard to know what to pick for your summer garden parties, or BBQs… So, we have gone through and whittled down our wines to those that go down well during the warmer months!

What Harry has to say… “You just can’t go wrong with a bottle of white in summer.. food, no food… nibbles, no nibbles… friends, no friends.. it’s all good!”

Rose Wines

What Harry has to say… “L’ostal, Lumari and Archivio Rosato are all gentler, lighter, and really easy drinking wines. The Charles and Charles Rose is slightly thicker, still delicious and light, but it goes great with food – ideal for BBQs! The Gerard Bertrand Rose is something totally spectacular. It has a slight savoury, pepper finish making it a perfect partner for a goat’s cheese and rocket salad, it could even be paired with a steak to have instead of a red for the summer months”

What Harry has to say… “Reds in summer can still be thoroughly enjoyable, especially the lighter, fruitier wines. Barons Red is a perfect example, it is light and very similar to a Pinot Noir making it a perfect summer red”

What Harry has to say… “Oft, a sparkling wine in the sun… I mean, you can’t go wrong. Or for something a bit different, I really recommend trying the Moscatel do Douro off-chilled… Keep it in the fridge but then let it cool for 45 minutes before drinking it – it’s great to have with a bowl of cashew nuts, or a proper nutty cheese”

How Red Wine is Made

Red wine. We sip it, slurp it, love it. It’s not hard to appreciate a good glass of red, but have you ever wondered how they make every mouthful so wonderful? From grape to bottle, we’re breaking down the intricate steps that goes into making red wine perfect.

So sit back, relax, and maybe even pour a glass…

Step 1 – Grape Picking

Every bottle of wine begins with a grape, but before they are even picked there are several steps to making sure each and every grape is ripe, juicy, and delicious. They start by analysing their PH to check their sweetness levels. This is often done by trying the grapes and testing how they feel! They then calculate the weight before picking the grapes, either by hand or machine. Whilst both are effective, Vinters prefer to pick by hand as the grapes are fragile and require a lot of care.


Step 2 – Sorting

After carefully selecting the vines, the grapes are de-stemmed by hand and other unwanted parts are removed from the conveyer-belt. Once sorted, the grapes are then transferred to Vats, which are usually made of Stainless steel. They are then crushed to release their flavours and juices, or transported whole. When the berries are left whole, the wine is often more powerful and rounded, as the fermentation (the process of grapes turning into wine) is done more gently.

Step 3 – Maceration

Once in the Vats, the fermenting grapes begin a process of Maceration, where the colour, flavour and tannins are extracted from the skins and pips. During this process, Alcoholic Fermentation takes place, either naturally or through adding yeast to the vats. Winemakers allow this process to take up to 4 weeks so that the tannins are strong and rich.


Step 4 – Pressing

After alcoholic fermentation, the existing juice is then removed from the skins and they are pressed to release any additional flavours and juice. The wine is then transported to a new vessel which is often made of stainless steel or wooden barrels, known as Barrique. Step 5 – Evelage

Elevage, also known as maturation, is the process of leaving the wine to develop for 12-24 months. In this stage, the wine is transported to a different barrel to remove any unwanted sediment. This step is critical to developing the delicious flavours we love in a glass of red, so is done in a very lengthy and controlled manner. Step 3 – MacerationOnce in the Vats, the fermenting grapes begin a process of Maceration, where the colour, flavour and tannins are extracted from the skins and pips. Some wines can be a blend of over 100 varieties, so you can imagine how long this process can take!Step 4 – Pressing

Step 7 – Filtration and Bottling

Once the wine is blended to perfection, they can finally begin the process of filtration. This occurs as the wine is transported from barrel to bottle, and the seal is added! The wines are then transported across the world to shops like ours, and enjoyed by people like you!

Cheddar

We’re kicking this guide off with a fan favourite, cheddar of course! Cheddar sits within our hard cheese range, which includes many other versatile options. This cheese is very versatile, but there are a few ways that you can use it to make the flavours of your meal pop.

Cheddar is perfect for:

  • Melting – toasties, burgers, fondue, pancakes, cheese sauce
  • Grating
  • Stirring – go wild with this one! We love it in soup or creamy pasta dishes
  • Baking – we love it in traditional scones, pasties or to make some cheesy bread

Brie

Brie is famous for its soft and squishy texture, so naturally, it’s best for melting and spreading.

We love a bit of Brie for:

  • Melting – it’s amazing on toast!
  • Baking – who said Camembert is just for Christmas?
  • Salad – Brie is brill for chucking in your salad – it works best with juicy fruits and nuts
  • Cooked veggies – check out our Boxing Day recipes for this one!

When it comes to wine- Bries buttery and light flavours pair well with a fruity white wine or bubbly in order to not overpower its earthy flavours. What a treat!

Goat’s Milk Cheeses

At Love Cheese, Goats is one of our favourites, but did you know about all the amazing health benefits it has?

  • Pizza – goats cheese is a great alternative for mozzarella if you’re looking for a healthy swap as it is made with less lactose and more protein than other cheeses. This also makes it a lot easier for you to digest!
  • Salad – goats cheese is grate for pouring over a crunchy salad and offers a range of textures and flavours! Yum!

The 10th Day of Cheese-Mas – 10 Things You Need on a Cheese Board

The festive season has nearly been and gone, (and it was absolutely delicious!!) but the fun doesn’t have to stop here! A good cheese board should be celebrated all year round, and there’s some things that we think are essential when it comes to your charcuterie. From crackers to cured meats, here are 10 things that you need to give your cheeseboard that wow factor.

1. Cheese!

Starting off with the star of the show, the cheese of course! We recommend having a range of different cheeses on your board including:

  1. A soft cheese 
  2. A Hard cheese
  3. Blue cheese
  4. An alternative milk cheese (this could be goats or ewes milk)

We also find that a range of cheeses can provide an array of textures and colours, perfect for giving your cheese board a pop of colour and diversity.

2. Crackers and Bread…

Naturally, we couldn’t create a cheeseboard without the crackers and bread! We recommend versatile crackers on the plainer side to compliment all your favourite cheeses and meats. Try something like our Millers Buttermilk crackers for a sweet yet simple accompaniment. 

When it comes to bread, we love chopping up some slices of sourdough of a delicious cracker alternative. It’s also great for dipping, too!

3. Chutney

We think that a (large) helping of chutney is an essential on anyone’s cheeseboard and one of our favourites is Rosebud Preserves’ Red Port and onion marmalade, a sweet and flavoursome chutney that works well with all our favourite cheeses. 

Pop your chutney in a shallow dish for a pleasing presentation on your cheese board, or why not just leave the whole jar!

4. Charcuterie (obviously)

Adding meat to your cheese board is a great way to add some colour and flavour to your cheese board. We love the look of folding the meat and placing it around the cheese to give your board some depth and contrast. Our favourites are chorizo, salami and prosciutto, which are all cured meats that are perfect for layering!

5. Nuts!

Nuts such as cashews, peanuts and hazelnuts are a great way to fill up your cheeseboard as well as being a delicious crunchy accompaniment. Simply fill any empty places with your favourite nuts to make your cheeseboard look packed out and full.

6. Fruit and Veg

We love the look of adding fruits and vegetables such as peppers, berries, apples and tomatoes to create a bright and interesting accompaniment to your cheeses. We suggest chopping up your veg into thin slices to make them easy for dipping and as a contrast to your larger slices of cheese.

7. Dips!

Dips such as hummus or dipping oil (a mix of olive and balsamic oil) are the perfect addition for your fantastic cheese board. They are a fan favourite and look and taste amazing!

8. Tapas

If you love cheese, there a good chance that you also love nibbles like olives, sun-dried tomatoes, and picked onions! We don’t need to tell you why you need to have these on your cheeseboard, let them do the talking for you!

9. Wine

Cheese and wine go together like no other pairing, so it’s essential you bring a bottle (or two!) to accompany your cheeseboard. If you’re into milder cheeses, why not go with a white? If you love BIG flavours, a red will suit you perfectly.

The 9th Day of Cheese-mas – 9 Hidden Gems

We’ve all got our favourites, our holy grails, the cheeses and wines that will always make an appearance on our cheese boards. But why not kick off your 2022 with something new?

We’ve compiled nine hidden gems that you may have missed this past year, ranging from Beer to Blue, we are certain that there is a lot for everyone to love. 

1. Burt’s Blue

We’re starting off with the small but mighty Burts Blue, a rich and creamy cheese that’s got a lot to love. If you’re into blue, this is a must try, and if you’re not, it’s a great way to give it a go!

2. Old Winchester

Our next best kept secret is the Cheddar- Gouda hybrid: Old Winchester. This aged cheese is deep and mature in flavour, decorated with delicious salt crystals, making it the perfect cheddar alternative to spice up your next cheese board.

3. Repeater Session IPA

This IPA is a fan favourite in our Speakcheesey café, but if you’ve only visited us virtually, you might not of heard of this one. Repeater is a gorgeous tropical pale ale that’s perfect for sharing in the sun with some friends. Save this hidden gem for the summertime and release its full potential, you won’t regret it!

4. Gjetost Mini

This cheese is a lot like marmite- you’ll either love it or hate it! Gjetost is a unique Norwegian sweet cheese with a sticky, fudge- like texture. We find that this cheese is a great conversation starter and adds a bit of diversity to your cheeseboard. Who knows, this might be your next favourite cheese!

5. Roberto Sarotto “Angeli” Dolcetta d’Alba

Our first underrated wine is the gorgeous Italian red Dolcetta D’Alba, an easy drinker that’s jam packed with the flavours of fruit and spice. This red is ideal for the festive season, and is the perfect partner for strong cheeses and BIG flavours.

6. Tetilla

Tetilla (translating to small breast in Spanish!) is a fantastic semi-soft cheese that may have flown under your radar this year. Its light and buttery taste makes it ideal for everyone, so grab some mates, some crackers and bread, and dive into this superb smooth and tangy cheese!

7. Scala Ciro Doc Blanco

This Calibrian white is a picnic basket essential. This hidden treasure is fresh and floral flavours are perfect for celebrating any occasion and goes down a treat with any wine lover like us! If you’ve been searching for your new favourite white, look no further!

8. Mahon

Mahon is a Spanish cheese that definitely deserves a lot more hype than it gets! This dense, crumbly cheese is distinctly nutty and sweet, with dashes of smoky paprika and fruity aromas. This cheese goes great with white wines, so why not pair it with our 7th hidden gem to create your new favourite pairing?

9. Inédito Blanco Rioja

A simple gorgeous white Rioja that quite frankly deserves more recognition. This single grape wine has playful aromas  with sweet notes, chamomile and secondary aromas of peach, citrus and tropical fruits that shine through onto the palate. It goes with loads of dishes making it an all around champion of wine.

The 7th Day of Cheese-Mas – 7 Staff Favourites

One of the best parts of working at Love Cheese is being able to try loads of delicious food! We’ve all got our favourites, but there are a few that really stood out for us this year, so we’ve got together seven of our staff favourites from 2021. Ranging from deep reds to bloomy bries, we all found something that made our year that little bit better.

1. Harry’s Favourite

When we asked the Big Cheese himself what he loved most from this year, it certainly wasn’t an easy question! In the end, he went with Wyfe of Bath, a delicious semi hard cheese with mouth watering creamy and nutty tones. This cheese is perfect on a cracker or enjoyed with a glass of red, but Harry enjoys Wyfe of Bath best on its own.

2. Stef’s Favourite

Stef is our wonderful warehouse manager who keeps our Love Cheese family running smoothly! Her all-time favourite is Montagnolo Affine, a Brie turned Blue cheese with the most magnificent creamy texture. This light cheese is often referred to as a ‘beginners blue’ as although it is on the milder side, it is still superbly buttery and salty! Stef loves this best on a crunchy cracker, how will you enjoy it?

3. Jordan’s Favourite

Shop manager and cheese and wine fanatic Jordan had no problem telling us which wine was his favourite this year! He chose Talo, a fantastic full bodied Italian red with gorgeous warm and spicy aromas, which is perfect for the winter evenings. This wine is best served with big and bold cheeses, but who could resist a glass on its own?

4. Angie’s Favourite

Angie, more informally known as Auntie Ange here at Love Cheese, is into the classics, and went with the aged Alpine cheese Gallus for her 2021 showstopper. Gallus is an intensely buttery and creamy cheese, similar to cheddar but with added lactic salt crystals and flavours. If you’ve been searching for something with a little bit extra, this cheese should definitely be at the top of your shopping list.

5. Jess’s Favourite

Shop assistant and Brie lover Jess discovered Wigmore to be her new favourite whilst working in our shop this year. Wigmore is a fantastic sweet and floral soft cheese made to traditional English methods. Jess loves a slice of this Brie melted over our sourdough bread for a quick and easy lunchtime snack, what a treat!

6. Mya’s Favourite

hen it comes to white wine, shop assistant Mya knows exactly what she loves and that is Lumari Nero d’Avola Rosi. This pale pink rose is rich in sweet, fruity flavours and hidden tropical aromas . Lumari is another great summer wine, and is one of our favourites to have a glass of in our secret garden…

7. Elle’s Favourite

Last but not least we’ve got our wonderful Elle’s favourite, Murcia al Vino aka Drunken Goat. This wine washed Goats cheese has the fruity flavours of a bottle of red followed by the distinct taste of a slice of goats cheese. Drunken Goat goes down a treat in our Secret Garden with a bottle of red, but Elle loves this cheese best with a light cracker to enhance its delicious flavours.

The 2nd Day of Cheese-Mas: Two Boxing Day Leftover Recipes

Here at Love Cheese we like to go all out at Christmas, and we mean ALL out. From carrots to cranberry sauce, our Christmas dinner is always the star of the show on the 25th. Every Boxing Day our fridge is full of leftovers, and it can be hard to know what to do with them. So, we’ve put together two super simple leftover recipes to give you some inspiration, and to make sure that nothing goes to waste this Christmas.

Cheesy Bubble and Squeak

We’re starting off with a classic leftover dish infused with a delicious cheesy twist.

All you’re going to need is:

  • Leftover veggies (cabbage, carrots, sprouts etc)
  • Leftover Mash or roast potatoes
  • 1 diced onion
  • Garlic 
  • Grated cheddar

Each measurement will depend on how many leftovers you have, (or how much you like cheese!) so don’t be afraid to guesstimate your measurements for this recipe.

Method:

  1. On a low heat, start by frying off your onion and garlic
  1. In a bowl, mash your veggies and stir in your grated cheddar
  1. Turn up the heat and add your vegetable mixture and mash. If you’re using roast potatoes, make sure to mash these before you fry them.
  1. Leave to fry whilst occasionally flipping and pressing down to compress
  1. Once crispy, take off heat and season with salt and pepper. Serve with any leftover meat or add to a fry up for an excellent Boxing Day breakfast.

Veggie Traybake with Cranberry and Brie

This recipe is Brie-lliant for using up all your leftover herbs and veggies!

What you’re going to need:

  • Approx 600g leftover roast veggies (carrots, parsnips, roast potatoes etc)
  • 150g Brie de Meux
  • 3tbsp Cranberry Sauce 
  • Olive oil for drizzling 
  • Leftover herbs (rosemary, thyme, sage etc)
  • Pine Nuts 
  • Pesto (optional)

Method:

  1. Start by preheating your oven to 200°c / 180 Fan/ Gas 6
  1. Pop your leftover veggies and herbs in a baking tray, drizzle in olive oil, and sprinkle in salt and pepper. Roast for 15 mins to allow the vegetables to heat and crisp up.
  1.  Slice up your Brie and dot it about over your cooked veggies. Pop back in the oven for 5-8 mins until melted
  1. Drizzle with cranberry sauce and pine nuts. Serve with pesto if desired

Explosive Pairing No 1: Don’t Tell Gary and Smoked Westcombe

Love Cheese Recipes: Beer Mac ‘n’ Cheese

Sometimes, nothing beats a bowl of mac ‘n cheese. This dish is so deliciously simple yet is still one of our ultimate comfort foods. Naturally, we couldn’t help but put our own twist on this creamy pasta dish by including something you may not expect. This recipe has all the steps you need to create a mind-boggling Beer Mac ‘n Cheese that will impress all of your foodie friends. This is something you HAVE to try!

This recipe requires the ultimate pale ale, so we went with one of our favourites: Turning Points ‘Disco King’. This American beer is perfect for the richness of a dish like macaroni cheese as its gorgeous juicy and fruity tones are a great flavour balancer.

To put the ‘cheese’ in mac ‘n cheese, we needed something with a kick. Isle of Mull is one of our Love Cheese favourite cheddars and it certainly packs a punch, this cheese is ridiculously mature and perfect for someone who can’t get enough of strong flavours.

Ingredients

Alongside your typical mac ‘n cheese ingredients, we’ve included some optional pancetta to jazz up your dish for some extra flavour. Don’t forget a glass of Disco King to accompany your meal!

All you’re going to need is: 

100g Isle of Mull Cheddar

50g butter 

2 cloves of garlic

500ml milk

250ml Disco King Pale ale

200g Mozzarella 

200g Pancetta (optional)

Recipe

  1. Begin by boiling your macaroni and stirring frequently to avoid sticking.
  1. Whilst your pasta is boiling, fry off the butter and garlic in a frying pan on a high heat. If you’re adding bacon, this is also a good time to start frying that in a separate pan.
  1. Lower the heat and add your milk and ale until mixture has been brought to a bubble.
  1. Pour in your macaroni (and 2/3 of pancetta) and mix until pasta is completely covered in mixture
  1. Stir grated cheddar and half of the mozzarella and mix again until all combined.
  1. Use the rest of your mozzarella and bacon to sprinkle on top to create a sensational cheesy dish and place in the oven for 7-10 minutes until crispy on top and oozing underneath!
  1. Dish out immediately as this treat is best enjoyed hot. Serve with steamed veggies to give your plate a splash of colour and a crunch.

Creating a Spooky Halloween Cheeseboard…

Time to swap out your sunglasses for a Witches hat and broom as the spooky season has finally arrived! Movie nights in, and all of the spooky games are amazing but for us, its all the fantastic food and wine that comes with Autumn that makes Halloween one of our favourite times of the year!

We’ve put together the ultimate step by step guide to creating a wicked cheese board that is sure to get anyone into the spooky spirit. Think bright, bold colours, intense flavours, and an all round delicious treat that is sure to impress all your friends and family.

We’ve chosen five different cheeses to decorate our board, but it’s totally up to you when it comes to your own petrifying cheese platter. If you’re looking for some inspiration, let us help guide you through some of our Love Cheese favourites, are you ready for bright colours, gooey textures and some absolutely delicious cheeses?This board is all about the big and the bold, so don’t be afraid to experiment and find your favourites with this cheese board. We love adding cured meats, fruits, nuts and loads of extra goodies to our board but don’t hesitate to add what you love!

A step by step to build your cheese board…

1. Start by placing your choice of cheese on the board. We recommend separating them out across your platter and cutting them up into different shapes, (we loved the look of triangle slices) so you can easily grab whatever you fancy. We left our brain shaped Langres Brie as a whole but sliced our mini black bomber truckle in half to give the board a bit of brightness and a contrast.

2. We then went in with the cured meats. We started by folding each slice in half and placing them mainly in the centre of the board and surrounding a couple of cheeses. We added some slices of salami and chorizo but you can tailor your board to your preferences.

(if you are vegetarian then why not include Quorn cocktail sausages, or olives… You don’t need charcuterie for a spooky board!)

Love Cheese Top Tip: Layer!! Make sure you cheeseboard is completely covered to really give that “wow” factor!

3. Now its time for all the fun stuff. Fruits such as grapes, black berries and apples are a great addition to any cheeseboard and their dark colours are perfect to get your spread looking sinister. We added half a pomegranate to the corner our board and put some of the filling over our cheeses to get that ‘bloody’ good look, you could also try this with some chutney!

4. Fill any empty space with nuts (we loved the idea of ‘brain shaped’ walnut halves!) and stacked crackers, we even drew faces on tangerines to make mini pumpkins! Have fun and be creative with this part as it is all about making your cheese board unique and perfect for you!

5. Finish by adding a pot of red onion chutney and some decorative spiders to make this sure this cheese board gives you the shivers!
