A water buffalo milk cheese, Quadrello di Bufala is rich in flavour thanks to its high protein and fat content. A little like Taleggio, it’s salty and soft, with a distinctive taste that doesn’t overpower accompaniments.
Light, Moscato grape wines work well with this cheese. We’d suggest a fairly sweet Italian like the Moscato D’asti, as it’s both fragrant and creamy.
